Though fall in Southern California really just means “less hot,” it is still a great time to incorporate some of those delicious comfort foods we associate with the season. The problem here, however, is how heavy these meals often are.
In an effort to combat that problem, these are recipes I’ve tried and love to make during the autumn months. They’re lighter, flavorful, and interesting.
Sheet Pan Pork Chops
These pork chops are mouth watering and fast — perfect for my weekday meals. Everything is put on the sheet pan and cooked for 20 minutes, and just like that, the meal is ready. Many act like pork is a scary, difficult thing to cook, but it really doesn’t have to be.
Flatbread with Pumpkin Marinara Sauce
I’ll be honest: I was skeptical of this one. Pumpkin and pizza doesn’t really go together in my mind, but it works. Since pumpkin is a pretty neutral flavor, it takes on the flavors of the sauce well. Paired with arugula, balsamic vinaigrette, and blue cheese, this these flatbreads are bursting with flavor.
Sheet Pan Sausage and Vegetables
This is another super fast, easy recipe. Once again, you put it all on the pan, toss it with spices, and throw it in the oven. The original recipe calls for vegan sausage, but I opt for the real thing. There are some great vegan sausages if you want to try it, however!
Pumpkin Pad Thai Bowls
This one seemed a little weird to me at first, but with the success from the pumpkin marinara sauce above, I figured pumpkin pad thai might be good too. It definitely didn’t disappoint. This dish is bursting with so many great flavors that I found myself going back for seconds when I was putting it away.
